The demonstration pastry chef made these beautiful dessert plate displays (as well as the Diplomat Pudding, aka, a type of Bread Pudding) for class yesterday! He was the head pastry chef at the top restaurant in Paris, in 1998. (Which restaurant that was, I don't know yet.) He's a very entertaining and hilarious French chef!
